Some year’s I include Sepia in my 50, other years it has been adjacent sister property Proxi. I admire both, but in the interest of sharing the love among other restaurants, I switch off. This is Sepia’s year. It’s the more relaxed, more refined restaurant of the two, and executive chef Andrew Zimmerman’s food offers a complexity that he pointedly avoids at Proxi.
