Colonization has produced its share of problems, but it also has produced many a tasty snack. Take banh mi, the yummy Vietnamese sandwiches that start with a crusty French baguette and are filled with shredded carrot salad, white onion strips, jalapeno rings, cucumber slices, fresh cilantro, mayonnaise and assorted meats. While the vegetable fillings rarely change in this hand-held lunch, the meat selections do. The most popular banh mi at Uptown’s Hung Phat Bakery is called bahn mi thit nguoi ($2) and features rectangles of ham, along with a slice of white pork bologna and something that looks like raw bacon with a bright red stripe going through it. Delicious. Ba Le Bakery sources report that their hefty gourmet banh mi ba le ($2) is the fave among their customers. Loaded with pork liver pate, head cheese and ham, this gourmet nibble packs a garlicky punch. Other bahn mi at Ba Le include barbecued beef and shredded chicken for $2.50.
