This sausage dish with sauteed apples makes a surprisingly light meal that will satisfy cool-weather cravings for Germanic-style food.

The chicken apple sausage has less fat than pork varieties, and sage-flavored sauteed apples and sauerkraut make great accompaniments. If you just have to have potatoes with your sausage, try boiled baby Yukon golds with a little butter and parsley.

SAUSAGES WITH SAUTEED APPLES

Preparation time: 15 minutes

Cooking time: 15 minutes

Yield: 4 servings

6 precooked chicken-apple sausages

2 tablespoons butter

1/2 teaspoon ground sage

3 Fuji apples, cored, sliced

Salt

2 tablespoons water

4 tablespoons gin

2 cups drained sauerkraut

1. Heat large saucepan of water to boiling. Add sausages; cook until heated through, 4 minutes.

2. Melt butter in large non-stick skillet over medium-low heat. Add sage; cook until fragrant, 1 minute. Add apple slices; cook until slightly brown, about 3 minutes. Season to taste with salt. Stir in 2 tablespoons water; cover. Cook until tender, about 3 minutes, stirring occasionally. Remove apples; set aside on warm plate.

3. Add gin to skillet, increase heat to high; cook until boiling. Add sauerkraut, stir to combine; cook until heated through. For each serving, arrange 1 1/2 sausages on bed of sauteed apples. Spoon sauerkraut on one side.
