There are few yummier ways to beat the Chicago heat than with a bowl of ice cold borscht.
Available at most Lithuanian restaurants, this traditional summer soup is made with sour cream, buttermilk and plenty of cooked beet strips. Sprinkled with chopped dill and green onions, the cold, creamy dish looks a lot like Pepto Bismol with a garnish – and it’s just as soothing as it looks.
We like the chilly magenta borscht ($2.50) at Mabenka (7844 S. Cicero Ave., Burbank; 708-423-7679) and the creamier version ($2.75) from Healthy Food Restaurant (3226 S. Halsted St.; 312-326-2724), but our total fave is the ultrafresh and flavorful rendition ($2.10) served with a boiled potato at the homey Neringa Restaurant (2632 W. 71st St.; 773-476-9026) in Marquette Park.
