Here’s a look back at some of the Lettuce Entertain You restaurant concepts that worked — and some that didn’t — during the company’s past 50 years.

Rich Melman, left, gives direction to R.J. Grunts manager Danny Coval in October 1974. This restaurant, which opened in 1971 from Melman and the late Jerry Orzoff, is notable for two firsts: It was the first restaurant in the Lettuce Entertain You Enterprises empire, and it was, or so it says, home to the world's first salad bar.
