Since 1978, a fitting finale to a red meat dinner at Morton’s The Steakhouse has been the lemon souffle.

“An amazing lemony scent hits your nose as the dessert makes its way to your table,” says chef Wade Wiestling, vice president of Culinary Development at Landry’s Restaurants, the hospitality group that manages Morton’s. “That scent is lightly embedded in the fluffy center: Lemon essence is released each time a guest digs in.”

The souffle’s simple ingredients are sugar, lemon and egg whites, carefully whipped for four minutes at “180 beats per minute — get a piano metronome if you need help figuring it out,” advises Wiestling. It’s all baked at high temps, so that air whipped into the mixture expands as proteins cook and the souffle’s shape is set.

The finished souffle is served with a pot of sabayon sauce, made with whipped cream, egg and Marsala wine – in case you feel the need to up the richness quotient. The finished dessert, says Wiestling, is “like eating a cloud.”

The puffy lemon souffle is a classic conclusion to an old school dining experience, helping any meal end on a high — that citrusy aroma will powerfully persuade you to make belly space for just a few more bites.
