“We were down in Greenville, Miss., at a juke joint, drinking late at night,” remembers Adam Wendt, partner and executive chef at The Delta. “This lady sitting next to us introduced herself as a third-generation Isola County catfish farmer.”

That barroom confab convinced Wendt to ship in this regional catfish for his new Wicker Park restaurant, which celebrates and rethinks the foods and flavors of the Mississippi Delta.

“Most catfish,” explains Wendt, “are commodity fish. The taste is muddier, greasier, fattier, and it has a puffy consistency. Isola County catfish is more flaky and clean tasting. It’s the best I’ve ever had.”

It is indeed some of the finest catfish around.

What impresses a diner about this fish is how pure it looks and tastes. A talented kitchen helps.

“Nobody prepares catfish like we do. Catfish is pretty much always fried. We grill it,” says Wendt. “We want the fish itself to shine.”

The Delta’s catfish is finished with coriander, parsley, dill, tarragon, chives and marjoram, herbs that “bring freshness and depth to the dish.”
