In 1950s Venice, a chef at Harry’s Bar, a Hemingway-preferred watering hole, dubbed a raw beef dish “Carpaccio” after a Venetian artist who was known for the rich red tones in his paintings.

To prepare his octopus carpaccio, chef Bill Montagne of Nico Osteria blanches the sea creature, braises it in bacon-laced court bouillon, coats it in an onion-based marinade and chars it on a griddle. After cooling, it’s cut into thin slices and beautifully arranged on the plate in a circular pattern. To see it is to want to eat it.

Braising tenderizes, the marinade pushes flavor forward, and charring the octopus enhances overall smokiness. “The octopus is prepared in a way that layers flavors,” says Montagne. “Paprika adds spice, oregano gives some freshness, and fennel savoro provides an onion-y note.”

The octopus is finished with both fresh and preserved lemon to add sweet and sour notes. Carpaccio, however nontraditional, has never been better.
