The brains behind Potter’s, chef Mathew Wiltzius, is cooking up a new burger concept, Chicago Burger Bar in the Palmer House hotel.But this isn’t just any burger bar in the city—this menu will draw inspiration from Chicago’s many neighborhoods. From the Lakeview Burger, a gooey cheese-curd concoction to the Gold Coast burger made of foie gras and a5 Kobe beef (fitting for the high-end ‘hood) or the Little Italy with Italian beef, giardiniera, sport peppers and provolone, each burger gets its unique touches.
Each option uses locally grown ingredients from the hotel’s rooftop garden and a quarter-pound patty. On offer will also be a “box o’ fries” and a variety of milkshakes. A remake of the Palmer House’s signature brownie will be available in the “Brownie Burger,” featuring a doughnut bun with apricot marshmallow and cherry bavarois.
