Lamb, the other red meat, has a way to go before Americans consume it in anything like the quantities that we devour beef.

“People think lamb is gamy or barnyard-y,” says chef John Manion of El Che Bar. But at the West Loop restaurant, diners open to ordering the lamb ribs ($14) are in for a phenomenal treat.

Manion cures the ribs for several hours, marinates them overnight in fennel and herb paste, and then heats them over the wall-high flames of his magnificent Argentine grill. After this preliminary cook, the ribs are braised to super-tenderness, and then, right before serving, they’re finished over fire.

The resulting ribs boast a beautiful dark crust and a vibrant red-pink inside, the meat flavorful — and yes, gamy — but not too fatty, as some of the lush lamb’s fat is rendered off during the grilling and braising. “I like the funk American lamb brings to the table,” Manion says.

The only thing that could make this dish better? Wine, of course. Try any of the excellent, reasonably priced Argentine pours from sommelier Alexis Douglas.
