It’s a classic combination in Italy, a grilled steak, hot, meaty and rich, topped with an arugula salad, cooling, peppery and fresh. This version pan-fries the steak, but the pairing is stellar nonetheless. And it wants an equally excellent wine pairing. Here are three to try.

Rib steaks with arugula salad

Rub 2 rib steaks all over with cut garlic; season with salt. Heat 1 tablespoon olive oil in a large, ovenproof skillet over medium-high heat. Add steaks; brown both sides. Transfer skillet to 350-degree oven; cook to desired doneness, about 8 minutes for medium. Meanwhile, whisk together 1/4 cup olive oil, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard and 1/4 teaspoon salt. Toss 1 bag (5 ounces) baby arugula in a large bowl with dressing to taste. Sprinkle with pecorino cheese; toss. Slice the steaks. Serve salad topped with steak, sprinkled with more pecorino. Makes: 4 servings

2015 Montenidoli Rosato, Tuscany, Italy: The freshness of this wine will play nicely with the peppery arugula salad. Made of 100 percent canaiuolo, a grape variety that is not normally a star in Tuscany, the wine’s sweet red strawberry and mandarin orange create a lovely, plush (but not cloying) texture, with lively acidity and firm tannin that will cut through the richness of the steaks. The wine also offers a soft perfume of white roses and fresh herbs.

2008 La Antigua Clasico Rioja Reserva, Rioja, Spain: This super-lean and juicy wine has sweet red cherries and dark cocoa, which will work nicely with the rib steaks. Also, the smoky, tarlike element in the wine will highlight the char on the steak, and the wine’s integrated tannin will create a streamlined and precise pairing. Dried thyme and sweet oregano are present, and will bridge the elements of steak, tangy Dijon and spunky arugula.

2009 Querceto di Castellina Belvedere Chianti Classico Riserva, Montalcino, Italy: The acidity and red fruits in this Chianti are exact, and it has the perfect balance of weight, tannin and structure to create harmony with every component on the plate. Rich, macerated red and black plums, along with just a touch of earthiness, will leave you with a refined, silky texture that dances on the palate — a perfect pairing with this steak dish.
