Cold-brew coffee is out and cold-brew tea is in, if Argo Tea has its way.

On Thursday, all of the company’s Chicago tea cafes will give away free cups of cold-brew tea, hoping to introduce customers to the new product. The free portion is the shop’s small-size cup; for 50 cents or $1, customers can upgrade to medium and large sizes, respectively.

So, what’s cold-brew tea? The company is working with two kinds of tea (Northeast Indian Darjeeling black and Japanese Gyokuro green) to produce a tea brewed similarly to cold-brew coffee. The process, easier on the tea leaves than hot-water tea extraction, softens the astringency and tannin of the tea, making it taste naturally sweeter and less bitter — though there is also less caffeine.
