It’s officially winter, so if you haven’t already broken out the warmest PJs in your repertoire, you’re doing it wrong. But for those who sleep in the buff, The Winchester has you covered with the Flannel Pajamas cocktail, with pumpkin chai-infused scotch, apple brandy, oloroso sherry, pomegranate syrup, lemon juice, egg white and decanter bitters.
While warming winter spices, like cloves and cinnamon, are the cocktail’s front-runners, bar manager Jessica Hart wanted all the flavors to be present, so she used brandy and sherry to mellow out the harsh-tasting scotch. The fruity grenadine and lemon juice brighten it up, while the egg white smooths it out. “Soft and warming, and something you bring out in the winter time,” Hart said. Just like those flannel pajamas.
