The Dawson (730 W. Grand Ave., 312-243-8955) will host a woodsy-themed pop-up dinner called “From Wisconsin … With Love,” from 6 p.m. to 9 p.m. March 26. It marks the first event in its ongoing pop-up series.

The series is a collaboration between the West Town restaurant and Death’s Door Spirits and Bittercube, which are both based in Wisconsin, and is intended to celebrate the outdoors of that state.

A six-course menu will feature cocktail and food pairings, including the Shanty (Death’s Door gin, elderflower, green apple, horseradish, Bittercube Jamaican No. 1 bitters, sparkling wine) paired with fluke, lardo, fennel and tangerine and the Baraboo Trail (Death’s Door gin, grapefruit, mezcal, Wisconsin maple syrup, salt, Bittercube Corazon bitters) paired with romanesco steak, celery root and cauliflower.

To create an outdoor-like atmosphere indoors, The Dawson will also feature an ice fishing tent, a campfire stove and a bonfire inside the restaurant.

The next pop-up dinner, a French bistro-themed collaboration that will include Scofflaw and The Violet Hour, will take place April 23rd.
