What he’s serving: The Two Timer ($12 at Wood) is a pisco-based cocktail with apricot and cinnamon notes. “I wanted something that’s summer and winter, so you’ve got the apricot and lemon juice, then you’ve got that little bit of cinnamon to blend it all together,” he said. The name is inspired by the base alcohol, a white brandy made from Peruvian or Chilean grapes. “Pisco kind of has a flavor of vodka and tequila. It’s kind of like a two-timer.”
Bar hear-o: “The more you’re behind the bar, the better your hearing gets,” Tommy said. He’s played therapist to out-of-towners and even watched a couple sign divorce papers. “They were signing their papers at the bar, and you’re thinking, this is probably a really bad moment to go in there and say, ‘Hey, let’s do shots!’ ” He also witnessed a close encounter between a dozing man and his pint glass of beer. “I thought the guy was going to lose his eyeball,” he said. “That’s the moment when I learned, when you’re behind the bar, you’ve gotta look at everybody.”
His hangover cure: “I hardly get hungover, but if I do, I take some Gatorade to the gym and sit in the steam room and sweat it all out,” Tommy said. He’s also a believer in the healing powers of a fountain Coca-Cola from McDonald’s.
