To get a taste of soon-to-open The Northman, the first bar in Chicago dedicated to cider is holding a pop-up dinner ($65) at Fountainhead (1970 W. Montrose Ave., 773-697-8204) 7 p.m. Monday.

Guests will be served a multicourse meal with dishes inspired by England and Spain and cider pairings. It opens with a cocktail made with Aspall Demi-Sec Cyder, followed by a cheese and meat sampling paired with Isastegi Sagardo cider. The first course includes Sandford Orchards cider served with a salad of crispy speck, three-minute egg and mustard greens. Course two is composed of harvest vegetable and potato pie with gruyere bechamel, and it’s paired with Oliver’s Gold Rush Cider, which is a collaboration between Oliver’s in England and Virtue Cider in Chicago. Yorkshire pudding, cider-braised short ribs, creamed kale and rosemary gravy is served with Aspall Imperial Cyder for the third course. Dessert is sour cream chocolate cake with anise ganache, and it’s paired with Guzman Riestra Sidra Brut Nature Cider.
