The Cemitas Atomica

This Pueblan paean to the pig is glorious excess defined, three interpretations of pork in a sandwich requiring a snakelike unhinging of jaw to devour. Three slices of Krakus ham, a guajillo pork loin “carne enchilada” and a breaded “milanesa” fried to order, sandwiched with buttery avocado slices and stringy, salty Oaxacan cheese. The sesame-flecked “cemitas” is a soft and crisp hubcap of a roll.
