Thinking about Champagne cocktails? The classic French 75 mixes gin, lemon juice, sugar and Champagne: a sort of Gin Fizz topped with sparkling wine. Champagne works best here, but a Cremant de Bourgogne sparkling wine makes a reasonably priced substitute. Adapted from “The Bubbly Bar,” by Maria C. Hunt (Clarkson Potter, 2009)

Ingredients

Ice

1 ounce gin

1/2 ounce freshly squeezed lemon juice

1/4 ounce simple syrup

4 or 5 ounces brut Champagne

Twist of lemon peel, for garnish

Directions

Fill a cocktail shaker halfway with ice. Add the gin, lemon juice and simple syrup. Shake vigorously for at least 30 seconds, then strain into a Champagne flute. Top with the champagne as needed, and garnish with the twist of lemon peel.

HOW TO MAKE SIMPLE SYRUP

Combine 1/2 cup of sugar and 1/2 cup of water in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a slow rolling boil, then reduce the heat to medium-low and cook for 5 minutes. Transfer to a heatproof container and let cool to room temperature. Cover tightly and refrigerate until chilled through; store indefinitely.
