Eating fresh produce is not always a better choice than frozen produce, according to a study at Pennsylvania State University.
Although fresh spinach has the most folate, an important B vitamin that may help prevent cancer and heart disease, the study shows that when the “fresh” spinach sits in a shipping truck–or your refrigerator–for a week, the folate content drops so much that frozen spinach becomes a better source for nutrients.
Of course, the absolutely best choice for home cooks is to buy locally raised spinach whenever possible, and to eat it soon after purchasing it.
