Wear gloves or wrap your hand in a dish towel for protection. If you don’t have an oyster knife on hand, use an old blunt dinner knife. Position the oyster over a bowl to catch the juices. Insert knife between the two shells opposite the hinge. Twist the blade to force the shells open.
Slide the knife underneath the oyster to cut the muscle attaching it to the shell.
