Talamanca peppercorns from Ecuador are very highly perfumed–their flavor notes are floral, as opposed to fierce. A little bit goes a long way, but they are as spicy-hot as Tellicherry with a flavor that flows across the mouth, building slowly, then tapering off again. Very cool. They’re certified organic too. Bill and Dan Brugger of Florida-based Brugger Brothers have imported the freshly harvested black and white peppercorns since 1992. They’re only available by mail; a 4-ounce bag of whole black peppercorns is $7.75; the white peppercorns cost

8.75. Shipping is $3.50. Call 800-949-2264 or visit talamancapepper.com.
