Great guacamole is welcome any time, but its success depends on the quality of the avocados. Select fruit that yields to gentle pressure. The California Avocado Commission offers these tips as well:
To peel, cut the fruit in half and remove the pit. Then remove the skin, starting at the small end.
To retain a fresh green color, eat peeled avocados immediately or sprinkle with lemon or lime juice and store covered.
If guacamole turns brown on the top after storage, simply discard the top layer.
