Maybe the most you’ve thought about cheese recently is whether to get cheddar, Swiss or provolone on your sub. That doesn’t matter to the folks at newly opened gourmet cheese shop Pastoral. Their goal: big flavor, little attitude. “People don’t want to pick the wrong thing and look stupid. We take that edge out,” says co-owner Greg O’Neill. Their selection of cheeses, olives, fancy vinegars and party trays cater to various levels of palates. The Cheese Course 101 ($29.99), a four- to six-person party platter, runs the gamut from creamy to sharp to give your taste buds a crash course in artisinal cheese.
