If you’re not eating three to five servings of vegetables a day, your diet isn’t meeting the USDA’s minimum requirement for a healthy adult diet in this country.

Green Giant, the 100-plus-year-old frozen vegetable company, has some suggestions, part of a Veggie Vows campaign launched by the company earlier this year:

– Offer fresh vegetables as an appetizer when throwing a party. The vegetable’s fiber will be filling and help guests avoid the tendency to overeat.

– Include vegetables in your breakfast routine. Keep chopped peppers and onions on hand–either fresh or frozen–to throw into an omelet or add to scrambled eggs or a breakfast sandwich.

– Add vegetables to your lunch. Cucumbers on a sandwich, red peppers and green peppers too. Or what about baby spinach leaves in addition to lettuce?

– Track your weekly vegetable consumption by keeping a list on the refrigerator. You might surprise yourself.

– And remember that vegetables add flavor to stews and soups, stir-fries and salsas. For example, give a store-bought salsa more zip by adding a can of corn or chopped cucumbers and cilantro, or veg-up your next pizza by adding spinach, broccoli or artichoke hearts.
