Thousands of Nicholas white free-range turkeys spend the last days of their lives waddling around the pens of Ho-Ka Farms, a slaughterhouse in Waterman, west of Aurora. Ho-Ka raises about 80,000 turkeys a year, 55,000 of which are slaughtered before Thanksgiving and the rest before Christmas.
The birds are sold to walk-in customers, butchers and supermarkets.

Ho-Ka has been in the business since 1933. It is owned by Robert Kauffman, whose father, Howard Kauffman, and grandfather William Kauffman also farmed.
