As Valentine’s Day nears, gourmet and nutritionist Audrey Beauvais of Apple-a-Day Baskets in Arlington Heights offers these tips for a romantic (and healthy) meal.

– Keep preparation simple so the cook can enjoy the evening.

– Get help from gourmet prepared foods and takeout stores, but check labels-don’t encourage love handles.

– Set the mood with candles, place settings and music.

– For appetizers, consider champagne and a shrimp cocktail or a salad of mixed baby greens with fresh red raspberries or strawberries dressed with a balsamic vinaigrette.

– Entree could include roasted pork tenderloin or turkey breast (both are blank canvases waiting to be brought to life with a fruity mustard sauce) or grilled beef tenderloin, fresh tuna or swordfish.

– Chocolate wins as the dessert of choice, but other possibilities are skewers of fresh fruit dipped in fat-free fudge sauce or tamed tiramisu for two.
