CHOCOLATE-CHERRY BREAD PUDDING

Preparation time: 15 minutes

Standing time: 10 minutes

Cooking time: 35 minutes

Yield: 10 servings

1/2 cup dried cherries or dried cranberries

1/4 cup orange juice

1 quart whipping cream

4 eggs plus 2 egg yolks

1/2 cup sugar

1/4 cup each: creme de cacao, rum

8 chocolate or plain croissants, cut into 1-inch cubes

1 cup semisweet chocolate chips

1. Combine cherries and orange juice in saucepan over medium heat; cook until cherries soften, about 5 minutes.

2. Whisk together cream, eggs, egg yolks, sugar, creme de cacao and rum in medium bowl. Put croissant cubes in large, non-reactive bowl.

3. Heat oven to 350 degrees. Add cherries and juice to croissant cubes; stir to combine. Pour cream mixture over croissants; let stand 10 minutes. Pour into 13-inch-by-9-inch baking dish. Sprinkle with chocolate chips. Bake until knife inserted in center comes out clean, about 30-40 minutes.

A–You were certainly right to want this lightened. The list of ingredients is amazing in its fat and cholesterol counts. But don’t worry, you can eat something just as wonderful without clogging your arteries. And yes, you must refrigerate leftovers to avoid salmonella. You can reheat in the microwave if you prefer to serve it warm.

NEW CHOCOLATE-CHERRY BREAD PUDDING

2 tablespoons orange juice

3 cans (12 ounces each) evaporated skimmed milk

2 eggs

4 egg whites

1/2 cup sugar

1 teaspoon vanilla extract

1/2 teaspoon each: chocolate extract, rum extract

1 loaf (1 pound) French or other dense bread, cut into 1-inch cubes

1/2 cup semisweet chocolate pieces

1. Heat oven to 350 degrees. Spray 13-by-9-inch pan with non-stick spray. Combine cherries and juice in small microwave-proof bowl. Heat 1 minute; let stand until cherries absorb liquid, about 5 minutes.

2. Whisk together milk, eggs, egg whites, sugar and vanilla, chocolate and rum extracts in large bowl. Add soaked cherries and bread; mix well. Let stand 10 minutes. Spoon mixture into pan; sprinkle with chocolate chips.

3. Bake until knife inserted in middle comes out clean, 35-40 minutes. Let cool 10 minutes before cutting.
