Low-fat turkey and salsa join forces to create a healthful take on meat loaf. This recipe is adapted from ” `Good Morning America’ Cut the Calories Cookbook,” edited by Sara Moulton with Jean Anderson.
TURKEY SALSA MEAT LOAF
Preparation time: 20 minutes
Cooking time: 50 minutes
Yield: 6 servings
1 tablespoon canola or olive oil
1 onion, finely chopped
1 carrot, peeled, finely chopped
1 rib celery, finely chopped
1 teaspoon chili powder

1 1/4 pounds lean ground turkey
1 cup each: old-fashioned rolled oats, bottled salsa
1 large egg
1/4 cup finely chopped parsley
1 teaspoon dried oregano, crushed
1/2 to 3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1. Heat oven to 350 degrees. Heat oil in non-stick skillet over medium heat. Add onion; saute 3 minutes. Stir in carrot and celery; saute 3 minutes. Add chili powder; stir 30 seconds. Remove from heat; cool.
2. Combine vegetables with turkey, oats, 1/2 cup of the salsa, egg, parsley, oregano, salt and pepper in large bowl. Mix well; pack into greased 9-by 5-inch loaf pan. Bake 30 minutes.
3. Spread remaining 1/2 cup salsa on top of meat loaf. Continue baking 20 minutes until instant-read thermometer inserted in center of loaf reads 180 degrees. Let cool 10 minutes before slicing.
