SAUTEED CHICKEN SALAD WITH APPLES AND BLUE CHEESE

Salad:
2 boneless, skinless chicken breast halves, thinly sliced
1 tablespoon lemon juice

1 teaspoon olive oil
1/2 teaspoon dried herb blend, such as Italian seasoning or herbes de Provence
1 package (10 ounces) salad greens, including romaine and radicchio
1/4 cup chopped walnuts
1/3 cup crumbled blue cheese
1/3 cup dried cherries, cranberries or golden raisins
1 rib celery, thinly sliced on diagonal
1 Granny Smith apple, cored, thinly sliced
Dressing:
1/2 cup bottled blue cheese dressing
1 tablespoon plus 1 1/2 teaspoons lemon juice
1/4 teaspoon each: salt, freshly ground black pepper
1. For salad, toss together chicken, lemon juice, olive oil and herb blend in medium bowl. Set aside.
2. Combine salad greens, walnuts, blue cheese, dried cherries and celery in large bowl. Cover; refrigerate, until ready to serve.
3. For dressing, stir together blue cheese dressing, lemon juice, salt and pepper in small bowl. Refrigerate until ready to serve.
4. Heat large, non-stick skillet over medium-high heat. Add chicken; cook, stirring constantly, until golden and cooked through, about 3 to 5 minutes.
5. Toss chicken into salad greens. Add apple slices and dressing; toss to coat.
