For faster preparation you can substitute 5 cups of shredded coleslaw mix for the cabbage and carrots. For different color themes, use green onions and green apples, red onions and red apples, or a combination of the two.

Preparation time: 40 minutes
Yield: 12 servings
3 apples, cored, finely diced
3 cups shredded green cabbage
1 cup each, shredded: red cabbage, carrots, jicama
1/2 small red onion, finely chopped
Dressing:
1/2 cup fat-free mayonnaise
1/3 cup white vinegar
2 tablespoons plus 2 teaspoons fructose, see note
2 tablespoons plus 2 teaspoons Dijon mustard
1 1/2 teaspoons caraway seed
1/4 teaspoon salt
Pinch white pepper
1. Combine apples, cabbages, carrots, jicama and red onion in large bowl; mix well.
2. Stir together dressing ingredients in small bowl; mix well. Add to vegetables; toss until evenly coated.
Test kitchen note: Granulated sugar can be substituted for fructose. Start with 1 tablespoon sugar and adjust to taste.
