Side dish a winner: The idea that healthful food is rewarding took on a different meaning recently for Lake Forest chef Kathy Hawkins, food and beverage director at the Lake Forest Health and Fitness’ Point Cafe.

Hawkins won $500 as one of eight finalists in a national Cook with Kellogg recipe contest with a side dish she had concocted, toasted barley with apples. For the Kellogg contest, recipes had to use the cereal giant’s products and include the words “and low-fat granola.”

“It’s low fat, loaded with fiber and low in calories,” Hawkins said of her entry. “The granola, which you add at the end, gives it a nice crunch, but you’re not adding fat. I think that more people are looking for dishes with nutritional value.” And she thinks Kellogg officials agree.

Hawkins’ recipe is appearing in the magazine of the contest’s co-sponsor, National Restaurants and Institutions.
