Listening to seven-hour speeches can make anybody’s thoughts drift momentarily to snacky foods. And though we heard only excerpts of Fidel Castro’s recent tremendous address, the sounds gave us an immediate hankering for our favorite Cuban dumpling – the croquetta. These deep-fried little torpedoes of minced meat (usually ham, but also chicken and fish) rolled in egg and bread crumbs are perfect starters to a traditional Cuban meal, or a tasty snack on their own. You can find excellent versions of these crispy quarter-width fingers of Cuban pizazz at Tania’s in Logan Square, Cafe Bolero in Bucktown, Havana in River North and up northwest, where we recently bought some at Rancho Luna in North Park. As they say in the apolitical republic of dumplings, “viva la croquetta.”
