In honor of the feasting that will no doubt take place Saturday night when Yom Kippur fasting is over, our dumpling of the week is the knish. Although this tuber-based treat is nowhere near as plentiful in Chicago as it is in New York, where the plump potato discs and squares are sold by street vendors, you can find a selection of imported and locally made knishes in our area if you know where to look. We recently tried some fabulous spinach knishes imported from New York at Kaufman’s Bagel and Delicatessen in Skokie (they also have broccoli, meat and plain varieties). With a golden, almost chewy crust and a super-flavorful spinach and potato filling, this knish knocked our socks off. You’ll also find locally made knishes at Max’s Delicatessen in Lincoln Park ($2.75 for flaky beef, potato or vegetable varieties) and at Kosher Karry’s on Devon Avenue ($3.79 a lb. for a hefty meat or potato knish).
