It’s not easy to be a calorie-conscious vegetarian and eat dumplings – especially since most are either served or stuffed with meat. One-year-old Korean vegetarian restaurant Amitabul in Lakeview, however, allows you to do both. In a playful variation on the traditional Korean mandu (which we will tackle later this fall) they’ve come up with Mandu Candu, a carrot, mung bean and bean sprout-stuffed packet, steamed and served with soy and chili sauce on the side. While these light triangular snacks are not exactly what you would call stick-to-your-ribs edibles, they are an almost guilt-free way to scare away your weekly dumpling jones.
