Shhhhh! Chef at work: When Chef Pierre Pollin heads for Hinsdale’s Public Library on Thursday, he’ll haul along everything but the kitchen sink–pots, pans, cooking tools, recipes, ingredients for the two entrees he’ll create and even his stove.

Not the industrial-strength model he uses at Le Titi de Paris, the Arlington Heights restaurant he purchased in 1978, but a portable magnetic induction burner he bought at last year’s restaurant show.

“All he has asked us to provide is a table,” said Jo Ann Schusterich, head of circulation, who booked French-born Pollin for the 7 p.m. program because Chicago-area librarians have put him high on their popularity roster.

“He’s popular because he’s so genuine,” said his wife, Judith. “He’s a happy person who makes cooking fun. His audiences have a good time with him.”

As for Pollin, he’s out to prove really good cooks can work anywhere–even at a public library.
