Panna cotta is a smooth Italian pudding that is like a custard without the eggs. It is becoming increasingly popular in this country and is showing up on more menus.

The name means “cooked cream.” However, this low-fat milk version offers a tasty alternative for lowering the fat and the calories. Also it is usually white, but the addition of the berry syrup gives it a delightful pink color that perfectly complements the nectarines in this recipe.

For the nectarines, look for white nectarines: Not as well-known as the more usual variety with orange flesh, they have a more delicate flavor. Because of improved genetics, white-fleshed nectarines are now more available during the summer. If you can’t find them, regular nectarines will work fine.

PINK PANNA COTTA WITH NECTARINES

Preparation time: 25 minutes

Cooking time: 10 minutes

Chilling time: 4 hours

Yield: 6 servings

2 envelopes unflavored gelatin

1/4 cup cool water

3 1/4 cups 1-percent low-fat milk

1/2 cup Italian berry syrup, such as raspberry or strawberry flavors, see note

2 tablespoons sugar

2 teaspoons pure vanilla extract

3/4 teaspoon almond extract

4 nectarines, thinly sliced

4 mint sprigs, for garnish

1. Mix gelatin and cool water in a small dish; set aside. Mix milk and sugar in a saucepan and cook over medium heat, stirring frequently, until it comes to a simmer.

2. Remove from heat, add gelatin and stir until it is completely dissolved. Stir in 1/4 cup of the syrup, and vanilla and almond extracts; divide evenly among six 6-ounce molds or custard cups. Refrigerate for at least 4 hours, or overnight, before unmolding.

3. To serve, dip the molds into hot water, loosen custard with a knife if necessary. Unmold each on a large plate and arrange all but 3 slices of the nectarines in a spiral pattern around it. Drizzle 2 teaspoons of the berry syrup over the top of each and garnish with remaining nectarine slices and a mint sprig.

Note: Italian berry syrups (like those used for flavoring coffee) are sold in some coffee shops, specialty stores and supermarkets.
