BAKED BRIE WITH APRICOTS AND ALMONDS

1 wheel (2.2 pounds) brie, rind left on, see note
1/2 cup apricot or apricot-pineapple preserves, at room temperature
1/2 cup chopped dried apricots
1/3 cup sliced almonds
French bread slices, warmed, or crackers or slices of fresh fruits such as apples, pears, nectarines or peaches
1. Heat oven to 350 degrees. Place brie in a round, ovenproof serving dish such as a decorative pie plate or quiche dish that fits it exactly with no spaces on sides.
2. Mix preserves and dried apricots in a small bowl. Spread evenly over brie. Sprinkle almonds evenly over top. Bake 7 to 8 minutes, or just until heated through. Serve immediately with warm bread, crackers or fruit.
Note: If a whole wheel isn’t available, buy an equivalent amount in wedges and position them in the ovenproof dish to form a whole.
