If you used to be a Girl Scout, or if you have been a Scout leader or den mother, you know how youngsters enjoy graham cracker sandwiches with melted chocolate and marshmallow squished in them. They’re called “s’mores.”
As Halloween or pre-Halloween goodies, many youngsters will like the following jack-o-lantern cooky sandwiches even better. I don’t suggest them for “trick or treat” night, however. If as many spooks and goblins call on you as ring our doorbell, it would be impossible to bake enough of these goodies.

Jolly jack-o’-lantern cookie s’more sandwich
Ingredients:
2 cups sifted flour
1/2 teaspoon salt
1 cup brown sugar
2/3 cup soft shortening

1 egg
1 1/2 teaspoons vanilla
3 tablespoons milk
1 1/4 cups rolled oats
3 tablespoons marshmallow fluff
8 (7/8-ounce size) milk chocolate bars
Directions:
Sift flour and salt into a bowl. Add sugar, shortening, egg, vanilla and milk. Beat until smooth, about 2 minutes. Blend in oats. Chill dough.
Roll out on lightly floured board to 1/4 inch thickness.
Cut 36 circles with floured 3-inch round cooky cutter (Editor’s note: or use a pumpkin-shaped cookie cutter.) Place 18 of the circles on greased cooky sheets.
With a knife cut out eye, nose and mouth shapes in remaining cookies. Then, place on greased cooky sheets.
Use cut out portions of dough to form stems on the “pumpkins.”
Place a half teaspoon of marshmallow fluff and 4 squares of chocolate bar on each plain cooky immediately after removing them from oven. At once press a cutout cooky over each, forcing the warm chocolate and marshmallow thru the openings.
Bake all cookies about 10 minutes at 375 degrees.
