It’s a tough list to make, but somebody’s gotta do it. The 2016 Michelin Guide for Chicago was released this morning with just two newbies: Dusek’s in Pilsen and Parachute in Avondale. Both made the single-star list (“a very good restaurant in its category”), while Acadia was bumped up to the two-star list (“worth a detour, … excellent cuisine”). Alinea and Grace continue to hold down their spots at the top of the list.
With dinner items like the Juicy Lucy ($15)—a Slagel Farms beef burger topped with red onion bacon marmalade and served with beef fat fries—Dusek’s is an accessible, affordable addition to the guide. Save Parachute’s Korean-American fare for a special occasion and don’t skip the dolsot bibimbap ($27) with Spanish octopus, squid ink and a soft egg.
